胡萝卜蛋糕 (Carrot Cake)

又老一岁了!很想每一年都停留在十九岁,我肯定是发白日梦,哪有可能不会老呢!老公请了一天假,带我去吃自助餐,今年的生日在Gonbei San庆祝,日本餐当然少不了Wasabi咯!Wasabi就吃得多了,Wasabi雪糕就没试过,机会来啦!老公平日喜欢做弄我,今天就轮到我做弄他,就请他吃Wasabi雪糕...Wasabi雪糕的味道真的怪怪的,看着他吃的样子真的很好笑。哈哈哈!今年的生日有我亲手为自己做的生日蛋糕,我太喜欢我的生日蛋糕了!很多贝壳巧克力很可爱 :-)

Ingredients:

  • 150g Carrots (shredded)
  • 130g Self Raising Flour
  • 45g Castor Sugar
  • 45g Brown Sugar
  • 1tsp Cinnamon Powder
  • 100g Corn Oil
  • 2 eggs
  • 40g Hazelnut (Chopped)
  • 40g Raisin

Method:

  1. Sift flour and cinnamon powder in a bowl.
  2. Beat eggs with castor sugar until light and fluffy.
  3. Add in corn oil, mix well.
  4. Add in sifted flour, carrots, hazelnut and raisin mix well.
  5. Pour in baking pan, bake at pre-heated oven 180 C for 40 minutes.
  6. Cool on a wire rack and apply cream cheese frosting.

Cream Cheese frosting:

  • 150g cream cheese (Room temperature)
  • 40g butter(Room temperature)
  • 70g icing sugar
  • 1tbsp lemon juices
  • Finely grated lemon zest from 1 lemon

Method:

  1. Beat cream cheese and butter till light and creamy.
  2. Add in icing sugar and mix well on low speed.
  3. Add in lemon juices and lemon zest, combine well.
