黑巧克力芝士蛋糕 (Dark Chocolate Cheese Cake)

A birthday cake for my husband.



Base Ingredients:
  • 40g Butter, melted
  • 90g Digestive biscuits (crushed)
Method:
  1. Preheat the oven to 180 °c
  2. Mix the crushed biscuits with melted butter, put into baking mold (press it evenly to make the cake base) and bake for 10 to 15 minutes or until light brown. 
  3. Leave it cool at room temperature
Cheese Filling:
  • 125g Cream Cheese
  • 25g Fine Sugar
  • 95g Dark Chocolate
  • 150g Whipping Cream
Method:
  1. Melt the chocolate in double-boil method.
  2. Beat cream cheese with sugar until smooth.
  3. Pour the melted chocolate into cream cheese mixture and beat to combine.
  4. Whip the whipping cream until soft peaks form.
  5. Fold in whipped cream into the chocolate cheese mixture at 1/3 each time until the mixture is fully combined.
  6. Pour the batter into molds and smooth the top.
  7. Fridge it for 2-3 hours at least.
  8. Sprinkle with cocoa powder before serve.

巧克力杯子蛋糕 (Chocolate Chip Cup Cake)

Ingredients:
  • 150g Butter
  • 150g Fine Sugar (I used 55g only)
  • 175g Self Raising Flour
  • 3 Eggs
  • 50g Chocolate Chip
Method:
  1. Preheat oven to 180C.
  2. Crack the eggs into bowl, beat lightly with fork.
  3. Place all ingredients in a large mixing bowl, beat with hand mixer until light and creamy.
  4. Add in chocolate chip and mix well.
  5. Bake at 180C for 18-20 minutes.

榴莲泡芙(Durian Cream Puff)

上个周末我随着我丈夫去马六甲的鸡场街走走,我小叔就介绍我们那里的榴莲泡芙,我们买了一盒试试,真的还蛮好吃的。不过价钱很贵,从小到大我都一直那么贪吃,就那一两个泡芙真是不够我吃。回来之后,我就马上上网找食谱。这泡芙不难操作,我的泡芙很快就出炉了。我丈夫太喜欢这榴莲泡芙了,一新鲜出炉,他就吃完了所有的泡芙。我连续做了两天的榴莲泡芙,通通都被他吃个清光!我的厨房实在太多东西了,就为了省钱和省地方,我都没买挤花袋,所以我的泡芙就没那么美了,有点沉。

 
Puff Ingredients:
  • 125g milk
  • 125g water
  • 125g butter
  • 5g castor sugar
  • 250g eggs (lightly stir)
  • 163g all purpose flour (sifted)
Method:
  1. Boil together milk, water, butter and sugar in a saucepan over medium high flame.
  2. Remove from heat, quickly stir in sifted flour until combined and mixture comes together into a ball. Return to low heat and cook, stirring constantly until the mixture leaves the sides of the saucepan and film forms on the bottom of the pan (3-4mins).
  3. Transfer the dough to a clean mixing bowl and stir the dough till reach room temperature (no steam).
  4. Gradually add in egg mixture and stir to incorporate. Mix thoroughly until desired texture (to check-scooping it up, the batter should hang down about 20sec before drop down).
  5. Pour batter into a piping bag fitted with a 1cm piping tip. Pipe on a baking tray line with non-stick baking paper, allow 2"-3" gap in between each batter.
  6. Bake at preheated oven at 180C for 20-25 minutes.
Durian cream
  • 100g non-dairy whipping cream
  • 120g durian flesh, use fork to stir well
Method
  1. Beat whipping cream over high speed till peak form.
  2. Add in durian flesh, mix well.

墨西哥饭 (Mexican Rice with Quesadilla)

这就是我丈夫唯一一次没有批品而一直都赞好的墨西哥餐。这是我从美国德洲旅行回来自创的食谱哦!我也很满意这食谱,有时间一定要再做一遍。

Ingredients A - Quesadilla:
  • 2 Tortilla wraps
  • 1 Fresh Tomato (finely chopped)
  • 1 Green Bell Pepper (finely chopped)
  • 1 Chicken Breast (cut into small cubes)
  • some Cheddar Cheese
Methods:
  1. Marinate chicken breast with some garlic powder, five-spice powder for 5-10 minutes.
  2. Grill at per-heated oven at 180 degree until cook
  3. Lay the tortilla on the baking sheet, sprinkle the grilled chicken meat, bell pepper, tomato and cheese on it
  4. Lastly, cover up with another slice of tortilla and grill in oven until the cheese has melted
  5. Cut the Quesadillas into quarters to serve
Ingredients B - Parsley Butter Rice:
  • 1 cup rice
  • 1 3/4 cups water
  • 1 tsp of salt
  • 1 tbsp Butter
  • some parsley 
Methods:
  1. Put the rice and water into rice cooker, add a pinch of salt
  2. Let it cooks for about 10-15 minutes then add in parsley and butter
  3. Stir evenly when the rice is cooked before serve.

Ingredients C - Tomato Salsa Sauce:
  • 1 Can Prego Tomato Basil & Garlic Italian Sauce
  • 1 Fresh Tomato (finely chopped)
  • 1 Green Bell Pepper (finely chopped)
  • 1 Onion (finely chopped)
 Methods:
  1. Pour Prego tomato sauce into hot pan, add in chopped tomato, onion and bell pepper.
  2. Stir lightly, cook in low heat until all ingredients mixed well.
  3. Put in small bowl to serve

巧克力曲奇 (Chocolate Chip Cookies)

Ingredients:
  • 250g butter
  • 60g fine sugar
  • 50g brown sugar
  • 2 eggs, lightly beaten
  • 320g all-purpose flour
  • 80g corn flour
  • 2 tbsp cocoa powder
  • 100g Chopped almonds
  • 250g chocolate chips
Methods:
  1. Preheat oven to 200C.
  2. Combine flour and corn starch in a small bowl, set aside. 
  3. Beat butter, sugar and brown sugar until creamy. 
  4. Add eggs and beat well. Gradually mix in the flour mixture. 
  5. Stir in cocoa powder, chocolate chips and almond nibs. 
  6. Drop by rounded tablespoon onto a baking sheet.
  7. Bake for about 10 minutes or until golden brown.
