切达奶酪饼 (Red Lobster's Cheddar Cheese Biscuits)

This is the best ever cheddar cheese biscuits that I like most! Every time I visit Red Lobster, I would definitely ask for more. I just can't resist this delicious cheddar biscuits and this has made me decide to bake it on my own.


Ingredients:
  • 250g Bisquick Mix
  • 165ml Milk
  • 60g Shredded Cheddar Cheese
  • 60g Melted Butter
  • 1tsp Garlic Powder
  • 1tsp Dried Parsley
Method:
  1. Preheat oven to 230 degree
  2. Put Bisquick mix, milk and cheddar cheese into a large mixing bowl until soft dough forms
  3. Drop spoonful dough onto baking sheet
  4. Bake for 8-10 minutes or until golden brown
  5. Melt butter and mix with garlic powder and dried parsley
  6. Brush generously over the warm biscuits and serve whilst it is hot

寿司 (Sushi)

我的第一个寿司作品,虽然卖相不太好,但老公说很好吃。两个人在家,简简单单的一餐,寿司是个不错的选择。


材料:
A)金枪鱼、美乃滋
B)蟹柳、日本黄瓜(切丝)、红萝卜(切丝)
C) 鸡蛋、盐、胡椒粉、奶油乳酪
D)寿司米、水、醋
E)寿司紫菜

做法:
  1. 将(A)罐头金枪鱼和美乃滋搅拌均匀备用。
  2. 沸水把(B)蟹柳煮熟备用。
  3. 沸水把(C)鸡蛋煮熟,剥壳,用汤匙把鸡蛋切碎,再加入盐、胡椒粉、奶油乳酪搅拌均匀备用。
  4. 将(D)寿司米洗净。
  5. 跟着寿司米包装上的指示,放适量的水和醋将寿司米煮熟。
  6. 用寿司紫菜加寿司米,再包材料A、B或C即可。

煎饼 (Eggless Pancake)

Early in the morning, my mind is just blank. I have no idea what to cook for breakfast. I was searching the internet and found this recipe. This is a quick and easy recipe, and the pancakes always turn out perfectly! I love these pancakes.


Ingredients:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 1 teaspoon cinnamon
  • 1 cup milk
Method:
  1. Put flour, baking powder and cinnamon together in a bowl
  2. Add the milk gradually until batter is smooth
  3. Heat up non-stick pan
  4. Cook on medium-high heat until both sides are golden brown.

我的西餐 (Chicken and Fish Fillet Western Combo)

平日家庭便饭煮得多,今天我又不想煮饭了。华人餐来来去去都是普通的几样菜,不是青菜、鱼、就是肉和汤。就趁今天是冬至,想煮些特别的,平时都很少煮的食物~西餐!很贪心的,我的西餐除了有鸡肉、鱼肉、香肠、番茄还有煎鸡蛋等等,好多东西吃。每个人都吃到饱饱,当然少不了汤圆来庆祝一下冬至,祝大家冬至快乐!


材料:
鸡胸肉、鱼片、玉米粉、盐、胡椒粉

酱汁:
切达奶酪、鲜奶、盐、胡椒粉

做法:
  1. 将鸡胸肉和鱼肉洗净,用少许的玉米粉,盐和胡椒粉腌至20分钟。
  2. 热锅,加少许油,把腌好的鸡胸肉和鱼肉煎至金黄色。
  3. 热锅,倒入鲜奶煮滚,加入切达奶酪和少许盐、胡椒粉,煮至香浓,淋上煎好的鸡和鱼肉即可。

鱼片米粉 (Fish Fillet Vermicelli Noodles)

This is my favorite fish fillet vermicelli noodles and I would like to share my recipe here


Ingredients A (Noodles):
  • Vermicelli Noodles
Methods:
  1. Soak in water for 5 minutes
  2. Bring water to boil, add the vermicelli noodles and cook for 2 to 4 minutes
  3. Drain and put into serving bowl
Ingredients B (Fish Fillet):
  • 1 piece Fish Fillet (slice)
  • Dash of salt and pepper (for seasoning)
  • Flour and Corn Flour (mixed it for coating)
Methods:
  1. Take the piece of fish and season it with salt and pepper
  2. Coat the fillet in flour then deep fry until golden brown.
Ingredients C (Soup):
  • 2-3 Tomatoes (slice)
  • some Young Ginger (slice thin)
  • some Salted Cabbage (shredded)
  • some Sesame Oil
  • 1 tablespoon garlic (finely chopped)
  • pinch of Salt
  • Chinese cooking wine
  • 100ml evaporated milk
Methods:
  1. Heat wok with 1 tablespoon cooking oil and fry the chopped garlic until fragrant
  2. Add shredded salted cabbage, sliced tomatoes, sliced ginger, stir lightly then add water and bring to boil
  3. Add seasoning (salt, sesame oil), cook further for 5 minutes
  4. Pour in evaporated milk and some Chinese cooking wine before serve

红龟粿 (Steamed Glutinous Rice Flour Cake with Sweet Green Peas Filling)

今天做了我最爱吃的茶粿~红龟糕。从小到大都没看过绿豆瓣到底是什么东东,开始还以为红龟糕的馅料是用青青绿绿的绿豆浸软而做成的,幸好这星期阿嬷在我家,是她告诉我红龟糕的馅料是用绿豆瓣做的。以下的食谱是来自Jane's Corner,谢谢她的分享。


材料:
(A) 50克粘米粉,110毫升水
(B) 250克糯米粉,30克糖,220克水,3大匙油,适量红色素

馅料:
300克绿豆瓣,200克糖

做法:
  1. 绿豆瓣浸透2小时,蒸直软熟。搅烂。
  2. 热锅下2大匙油,把绿豆茸加糖炒干至沾黏锅边,盛起备用。
  3. 把(B)料 除油以外拌匀。把(A)料煮熟。
  4. 把两个粉料加在一起,搅拌成一软团。
  5. 再加入生油揉匀成团。
  6. 把粉团分割成小团,裹入馅料,以沾了少许油的香蕉叶垫底。
  7. 放入蒸锅,以中火蒸7-8分钟,在糕面摸上少许油即可。

黑巧克力芝士蛋糕 (Dark Chocolate Cheese Cake)

A birthday cake for my husband.



Base Ingredients:
  • 40g Butter, melted
  • 90g Digestive biscuits (crushed)
Method:
  1. Preheat the oven to 180 °c
  2. Mix the crushed biscuits with melted butter, put into baking mold (press it evenly to make the cake base) and bake for 10 to 15 minutes or until light brown. 
  3. Leave it cool at room temperature
Cheese Filling:
  • 125g Cream Cheese
  • 25g Fine Sugar
  • 95g Dark Chocolate
  • 150g Whipping Cream
Method:
  1. Melt the chocolate in double-boil method.
  2. Beat cream cheese with sugar until smooth.
  3. Pour the melted chocolate into cream cheese mixture and beat to combine.
  4. Whip the whipping cream until soft peaks form.
  5. Fold in whipped cream into the chocolate cheese mixture at 1/3 each time until the mixture is fully combined.
  6. Pour the batter into molds and smooth the top.
  7. Fridge it for 2-3 hours at least.
  8. Sprinkle with cocoa powder before serve.

巧克力杯子蛋糕 (Chocolate Chip Cup Cake)

Ingredients:
  • 150g Butter
  • 150g Fine Sugar (I used 55g only)
  • 175g Self Raising Flour
  • 3 Eggs
  • 50g Chocolate Chip
Method:
  1. Preheat oven to 180C.
  2. Crack the eggs into bowl, beat lightly with fork.
  3. Place all ingredients in a large mixing bowl, beat with hand mixer until light and creamy.
  4. Add in chocolate chip and mix well.
  5. Bake at 180C for 18-20 minutes.

榴莲泡芙(Durian Cream Puff)

上个周末我随着我丈夫去马六甲的鸡场街走走,我小叔就介绍我们那里的榴莲泡芙,我们买了一盒试试,真的还蛮好吃的。不过价钱很贵,从小到大我都一直那么贪吃,就那一两个泡芙真是不够我吃。回来之后,我就马上上网找食谱。这泡芙不难操作,我的泡芙很快就出炉了。我丈夫太喜欢这榴莲泡芙了,一新鲜出炉,他就吃完了所有的泡芙。我连续做了两天的榴莲泡芙,通通都被他吃个清光!我的厨房实在太多东西了,就为了省钱和省地方,我都没买挤花袋,所以我的泡芙就没那么美了,有点沉。

 
Puff Ingredients:
  • 125g milk
  • 125g water
  • 125g butter
  • 5g castor sugar
  • 250g eggs (lightly stir)
  • 163g all purpose flour (sifted)
Method:
  1. Boil together milk, water, butter and sugar in a saucepan over medium high flame.
  2. Remove from heat, quickly stir in sifted flour until combined and mixture comes together into a ball. Return to low heat and cook, stirring constantly until the mixture leaves the sides of the saucepan and film forms on the bottom of the pan (3-4mins).
  3. Transfer the dough to a clean mixing bowl and stir the dough till reach room temperature (no steam).
  4. Gradually add in egg mixture and stir to incorporate. Mix thoroughly until desired texture (to check-scooping it up, the batter should hang down about 20sec before drop down).
  5. Pour batter into a piping bag fitted with a 1cm piping tip. Pipe on a baking tray line with non-stick baking paper, allow 2"-3" gap in between each batter.
  6. Bake at preheated oven at 180C for 20-25 minutes.
Durian cream
  • 100g non-dairy whipping cream
  • 120g durian flesh, use fork to stir well
Method
  1. Beat whipping cream over high speed till peak form.
  2. Add in durian flesh, mix well.

墨西哥饭 (Mexican Rice with Quesadilla)

这就是我丈夫唯一一次没有批品而一直都赞好的墨西哥餐。这是我从美国德洲旅行回来自创的食谱哦!我也很满意这食谱,有时间一定要再做一遍。

Ingredients A - Quesadilla:
  • 2 Tortilla wraps
  • 1 Fresh Tomato (finely chopped)
  • 1 Green Bell Pepper (finely chopped)
  • 1 Chicken Breast (cut into small cubes)
  • some Cheddar Cheese
Methods:
  1. Marinate chicken breast with some garlic powder, five-spice powder for 5-10 minutes.
  2. Grill at per-heated oven at 180 degree until cook
  3. Lay the tortilla on the baking sheet, sprinkle the grilled chicken meat, bell pepper, tomato and cheese on it
  4. Lastly, cover up with another slice of tortilla and grill in oven until the cheese has melted
  5. Cut the Quesadillas into quarters to serve
Ingredients B - Parsley Butter Rice:
  • 1 cup rice
  • 1 3/4 cups water
  • 1 tsp of salt
  • 1 tbsp Butter
  • some parsley 
Methods:
  1. Put the rice and water into rice cooker, add a pinch of salt
  2. Let it cooks for about 10-15 minutes then add in parsley and butter
  3. Stir evenly when the rice is cooked before serve.

Ingredients C - Tomato Salsa Sauce:
  • 1 Can Prego Tomato Basil & Garlic Italian Sauce
  • 1 Fresh Tomato (finely chopped)
  • 1 Green Bell Pepper (finely chopped)
  • 1 Onion (finely chopped)
 Methods:
  1. Pour Prego tomato sauce into hot pan, add in chopped tomato, onion and bell pepper.
  2. Stir lightly, cook in low heat until all ingredients mixed well.
  3. Put in small bowl to serve

巧克力曲奇 (Chocolate Chip Cookies)

Ingredients:
  • 250g butter
  • 60g fine sugar
  • 50g brown sugar
  • 2 eggs, lightly beaten
  • 320g all-purpose flour
  • 80g corn flour
  • 2 tbsp cocoa powder
  • 100g Chopped almonds
  • 250g chocolate chips
Methods:
  1. Preheat oven to 200C.
  2. Combine flour and corn starch in a small bowl, set aside. 
  3. Beat butter, sugar and brown sugar until creamy. 
  4. Add eggs and beat well. Gradually mix in the flour mixture. 
  5. Stir in cocoa powder, chocolate chips and almond nibs. 
  6. Drop by rounded tablespoon onto a baking sheet.
  7. Bake for about 10 minutes or until golden brown.
