Ingredients for Quesadillas:
- Tortillas
- Grated Cheese (Monterey Jack)
- Sliced mushrooms
- Fresh tomatoes, diced
- Large Onion, diced
- Green Bell Pepper, diced
- Skinless Chicken Breasts, cut into small slices
Method:
- Marinate chicken with salt, pepper, garlic powder and paprika
- Heat 1 tablespoons butter/olive oil in a frying pan over medium heat.
- Cook the chicken until slightly brown.
- Layer half of each tortilla with the chicken, vegetable mixture, then sprinkle with cheese.
- Fold the tortillas in half and place onto a baking sheet.
- Bake Quesadillas in the pre-heated oven 180C until the cheeses have melted (about 10 minutes).
